Position Summary:
As the Assistant Food & Beverage Manager, you will play a vital role in supporting the Food & Beverage Manager by overseeing the daily operations of all food and beverage outlets within the hotel. This is a dynamic, hands-on role ideal for a graduate with a degree in Business Administration, combining operational leadership with strategic thinking, team development, and a strong focus on guest satisfaction and service excellence.
Key Responsibilities:
- Assist in managing and coordinating daily operations across all F&B departments, ensuring a consistent and high-quality guest experience.
- Apply business acumen to optimize efficiency, service standards, and profitability across F&B outlets.
- Lead by example and support teams on the floor, fostering a collaborative and high-performance culture.
- Oversee shift schedules, opening and closing procedures, and ensure operational readiness at all times.
- Promote a culture of continuous improvement in hygiene, cleanliness, and service delivery in accordance with hotel standards and health regulations.
- Utilize leadership and interpersonal skills to create a positive, inclusive, and motivating work environment.
- Conduct interviews and manage onboarding processes, including payroll documentation and compliance for new hires.
- Develop and implement comprehensive training plans to meet operational needs, regulatory requirements, and team development goals.
- Use communication and stakeholder management skills to build effective relationships with cross-functional teams, senior leadership, and hotel guests.
- Serve as the hotel Duty Manager on a rotational basis, ensuring operational excellence across all departments.
- Apply critical thinking and problem-solving skills to proactively resolve operational issues and guest concerns.
- Prepare, communicate, and analyze weekly staff rosters to ensure optimal staffing levels based on forecasted business volumes.
- Monitor service quality and staff presentation through daily floor checks and service observations.
- Manage inventory, perform accurate stock counts, and implement cost-control practices in line with departmental budgets.
- Coach and develop supervisors to enhance their leadership capacity and overall department capability.
- Oversee auxiliary operational tasks such as cleanliness of public areas, waste management, and presentation of hotel spaces.
- Leverage knowledge of operating systems such as Opera and Micros to extract reports and guide daily operations.
- Participate in daily and weekly operational meetings to align departmental goals and communicate updates.
- Collaborate with the Meeting & Events team to plan and execute F&B requirements for events and conferences.
- Maintain clear, consistent communication during shift handovers to ensure continuity and service excellence.
- Manage and resolve guest and supplier enquiries efficiently, while maintaining service standards and professionalism.
Ideal Candidate Profile:
- Bachelor’s degree in Business Administration or a related field
- Strong understanding of business operations, financial oversight, and customer service principles
- Excellent leadership, team management, and communication skills
- Proficient in Microsoft Office and hospitality management systems (e.g., Opera, Micros)
- Adaptable, proactive, and solution-oriented with a keen attention to detail
- Passionate about hospitality and delivering exceptional guest experiences
- 2 or more years experience working in Food & Beverage in a 4 star hotel environment
