Hotel Operations Manager- Deputy General Mnager
This position may suit an esperienced Duty Manager or departmental manager in the area of food and beverage looking to progress to a more senior role.
- to report to and support the General Manager of the hotel and liaise with departments to ensure the smooth running of all operational departments.
- planning and organising the day to day operation of all departments with prudent rostering
- meeting and greeting guests and ensuring that all events / conferences run smoothly
- ensure that all guest related issues are resolved quickly and efficiently
- managing the KPIs for food, beverage, banqueting, conference, general costs in line with budgetary targets
- to oversee /manage the company food, beverage orders, delivery processes, including checking of orders, storage, stock rotation, security and loss investigation
- to oversee /manage all stock management processes(with the company external stocktaker) including timely stock counts, line checks, wastage
- identify training needs and monitor the training programmes in place
- manage and maintain correct staffing levels in the food and beverage departments in line with targets and in relation to sales-forecasting
- manage / control the labour costs of the food and beverage departments in line with budget
- communicate effectively with the team, through weekly HOD meeting
- follow all company security procedures, including loss prevention measures and procedures for the security of staff and the company at all times
- ensure the daily care and maintenance of the company plant and equipment
- be fully au fais with relevant legislation in respect of:-hygiene, safety health and welfare, data protection, fire and evacuation procedures
- be responsible for the attainment of the monthly food and beverage costs and liaise with the GM in regards to the appropriate action to be taken where necessary
- ensure that the proper procedures and controls in relation to all department financial transactions are monitored and maintained
in regards to groups, meetings, banqueting
- liaise with the sales and marketing team and ensure that every opportunity is explored to increase sales in accommodation, food, beverage and leisure activities in line with the agreed sales and marketing budget
- Any other reasonable requests made by the General Manager from time to time
Experience required:
At least 5 years plus working at a senior management level in a hotel / restaurant / bar
