The Chicken Inn, located at 31 the English Market, Grand Parade,Co. Cork, Cork, is seeking a skilled and experienced Butcher to join our team in Ireland. The successful candidate will be responsible for ordering, inspecting, and preparing meat for sale as consumable products, ensuring high standards of quality, hygiene, and compliance with food safety regulations.
This role requires proficiency in meat processing, adherence to HACCP standards, and a minimum of 2 years of professional experience as a butcher.
Key Responsibilities: Slaughter animals and remove skin, hide, hairs, internal organs, etc. Prepare meat for curing or other processing. Apply Good Manufacturing Practices (GMP) and Hazard Analysis and Critical Control Points (HACCP) protocols. Ensure proper refrigeration and storage of meat products in the supply chain. Monitor stock levels and maintain food specifications. Process customer orders and prepare specialized meat products. Adhere to legislation regarding animal origin products and environmental policies. Work effectively in a team and in cold environments.
Essential Requirements: Minimum of 2 years of professional experience as a butcher. HACCP certification or equivalent Knowledge of food storage and legislation about animal origin products. Proficiency in maintaining sanitation and following hygienic procedures during food processing. Ability to work in cold environments and as part of a food processing team.
Optional Skills and Competences: Knowledge of food allergies. Experience in implementing sales or marketing strategies. Ability to handle customer complaints and maintain food aesthetics. Computer literacy and inventory management skills. Experience in chilling processes and compliance with environmental legislation in food production.
