The Great Southern Killarney is currently inviting applications for the role of Restaurant Manager. This is a fantastic opportunity to join a well established team in one of Ireland’s most historic hotels.
We are looking for a passionate and experienced leader with a strong background in restaurant management within a 4 or 5-star hotel. The ideal candidate is mature, well-organised, and energetic, with a genuine commitment to delivering excellent service. They will lead by example and help ensure every guest enjoys a seamless and memorable dining experience throughout their stay.

Key delivery areas:
The Restaurant Manager is responsible for managing the finances related to the food & beverage in the Restaurant area, including purchasing, wage costs and cost-saving techniques. The Restaurant manager will play a role in staff management, health & safety, operations, promotions, doing their best to optimize profit across departments and create the best experience possible for customers by ensuring that the company is represented correctly and that the company's standards are upheld.
Task overview:
- Operational / General duties (development, maintenance of area of responsibility, SOP’s, Implementation of policy, assisting with menu formulation and ensure table plans, rosters, daily breakdown sheets and schedules are created on time)
- Communication (effective communication with team, team meetings, function sheets and briefings)
- Revenue generation (maximise sales and profits, drive revenue through employee empowerment, keeping abreast of trends, purchasing, stock control, meeting sales targets)
- Customer Service (ensure customers needs are proactively identified, addressed and exceeded in time effective manner, complaint resolution)
- Budget control / Financial awareness / Profitability (assist in setting budgets and controls to ensure maximum profitability, controlling expenditure, monitor performance indicators, procurement)
- Health & Safety (familiarising yourself with all H&S legislation in your area of responsibility and take necessary precautions to mitigate risks)
- Employee management (Leading, motivating, training, adhering to all HR procedures, development of team, planning for optimal people resources, ensuring positive working conditions)
Role Requirements:
- Current permission to live and work in Ireland essential
- Qualification in Hotel Management or similar a clear advantage although not required.
- At least 5 years supervisory, purchasing and revenue generating experience in a large, busy 4/5* hotel
- Proficient in Microsoft Office Suite and experience in Tablepaths, Hotsoft, Volante or similar
- Thorough Understanding of the importance of Customer Experience and uncompromising standards of excellence
- High Attention to Detail with regards to operation, property image, customer service, food standards, costs, safety, presentation, staff management etc.
- Management Skills – of both Food & Beverage, Operations as well as people
- Organizational Skills – schedules, timelines, future planning etc.
- Problem-Solving Skills – for employee conflict, customer complaints, stock issues etc.
- Proactive disposition – anticipation of challenges and mitigation of risks
- Great communication skills – ability to clearly communicate with suppliers, management and staff across a variety of nationalities and experience levels
- Financial Skills – in-depth understanding of budgets, targets, wage-costs
- Revenue Generation skills – thorough understanding of and experience in revenue generation
- Administrative skills – reporting, presentations, implementation and enforcement of policies and procedures
- Excellent listening and perception skills.
- Strong negotiation skills – assertive and persuasive
- Energetic, Friendly, Approachable, Professional, Courteous and Well Groomed
