We're looking for someone who knows drinks inside-out. If you’ve spent years building expertise in bar operations, know your way around a back bar, and want to put your stamp on a progressive drinks programme—this is your role.
Your Role
As Bar Manager, you'll take ownership of the bar operation—drinks, team, food and floor. You’ll lead by example, develop your team, and deliver a quality-focused bar experience that reflects our values and standards.
What You’ll Do
- Manage daily bar operations with a hands-on approach.
- Build our whiskey offering and champion local producers.
- Curate a drinks list that reflects the best of Ireland and beyond—wine, cocktails, non-alcoholic, and more.
- Oversee bar food operations, working with the kitchen to maintain consistency and quality.
- Lead and train the bar team, setting high standards and supporting development.
- Take responsibility for stock control, purchasing, and supplier relationships.
- Monitor margins, drive revenue, and ensure efficient scheduling.
- Support events, tastings, and promotions with a strong floor presence
What You Bring
- Minimum 3 years’ experience in a bar leadership role.
- Strong knowledge of spirits, cocktails, wines, and Irish whiskey.
- Passion for Irish ingredients and local sourcing.
- Solid understanding of bar food operations.
- Ability to manage costs, stock, and team performance.
- Calm under pressure with a sharp eye for detail.
- A natural leader who motivates and develops others
