Job Purpose
The Food and Beverage Manager is responsible for overseeing the daily operations of the hotel's food and beverage outlets, including restaurants, multiple bars, Kitchens and event space. This role includes leading the team, managing stock and financial performance, ensuring high service standards, and coordinating all food and beverage operations.
The ideal candidate will be both operationally focused and strategically driven, maintaining hands-on involvement during shifts while also taking charge of stock control, gross profit targets, team management, and HR processes. A clear understanding of monthly P&L reports, revenue tracking, and payroll budgeting is essential, along with the ability to analyse variances and implement corrective actions to maintain profitability.
This role also involves responsibility for accurate cash handling, credit card transaction integrity, and strict adherence to all company SOPs. The manager will lead efforts to achieve or exceed targets in operational and compliance audits, promote accountability, and ensure service excellence at all times.
In addition, the Food and Beverage Manager will contribute to the annual strategic planning process, helping to develop budgets and business strategies for the upcoming year in collaboration with senior leadership.
Key Responsibilities:
Operational Management
- Lead daily F&B operations across all outlets
- Ensure service consistency, team readiness, and compliance with SOPs
- Collaborate cross-departmentally to ensure seamless guest experience
- Monitor KPIs using systems
Stock & Financial Control
- Manage monthly stocktakes, supplier relations, and inventory via Procure Wizard
- Achieve gross profit and payroll targets; review P&Ls and take corrective action
- Maintain secure cash handling and credit card procedures
- Ensure delivery accuracy and internal stock controls
Team Leadership & HR
- Recruit, train, and develop a high-performing team
- Lead team communications, scheduling, and performance reviews
- Oversee HR matters including probation, disciplinary actions, and staff wellbeing
- Encourage engagement through platforms
Guest Experience & Quality Control
- Deliver consistent service excellence and meet audit standards
- Monitor guest feedback (EverGuest, OpenTable) and implement improvements
- Ensure health & safety compliance and maintain hygiene standard
Event Coordination
- Lead F&B operations for events, ensuring alignment with client expectations
- Coordinate with Events team on logistics, menus, and service delivery
- Oversee accurate billing and post-event reviews
Strategic & Financial Planning
- Present quarterly events calendar and contribute to annual planning
- Support the Group Head Chef with menu planning and development
- Participate in budget development and operational strategy
Systems Management
- Proficient in Micros, Procure Wizard, Tenzo, Alkimii, Ever Guest, and financial software
Preferred Experience- 5+ years in F&B leadership (hotels, resorts, or multi-outlet venues)
- Strong financial acumen and stock control expertise
- Skilled in team leadership, event management, and service delivery
