In summer 2026, we're opening Omos - a 16-bedroom guesthouse and 40-seat restaurant set on 4.2 acres just outside the heritage town of Abbeyleix, County Laois.
The name Omos - meaning honour, duty, and respect - reflects our intention behind the project: to create something lasting and meaningful, something with soul. A guesthouse and restaurant that feel like they belong - that reflect our neighbourhood and community, and that generously welcome curiosity, craft, and discovery.
As we prepare for our opening in June, we are now seeking an exceptional and experienced Restaurant Manager to lead our front-of-house dining experience.
Our 40-seat restaurant is designed to deliver a memorable guest experience, from multi-course seasonal set menus to occasional private dining and events. The successful candidate will be responsible for managing all of our restaurant's front-of-house activities.
Reporting directly to the owner (Executive Chef, Cuan Greene) and part of a small, dedicated management team, this is a fantastic opportunity for someone who is passionate about food and hospitality, thrives in a hands-on environment, and is excited about creating something new and personal with an exceptional team of hospitality professionals.
Commencing the role in September, this is a key hire for Omos. As our Restaurant Manager, you will work closely with our owner to oversee and support all aspects of the Restaurant during our pre-opening phase.
This will include, but is not limited to, contributing to strategic planning, assisting with the beverage program, recruitment and training of our people, establishing operational procedures, coordinating with suppliers, and ensuring the Restaurant is ready for our launch in June 2026.

The Role:
- Working alongside the Executive Chef/ Owner and project management team to plan and implement the restaurant's pre-opening phase as per Omos vision.
- This will include leading the hiring, onboarding, and training of our new front-of-house team.
- Thereafter, upon launch, working closely with the Head Chef and General Manager to coordinate service of our dining experience (one sitting Tuesday to Friday and 2 sittings on Saturday). We are closed on Sunday and Monday.
- Planning the wine program alongside the Owner, and training the team on wine selection and service.
- Leading an exceptional front-of-house team to deliver a seamless, warm, and attentive service for all our guests.
- Manage bookings, table plans, and special requests.
- Support event planning and execution, including small functions or private hires.
- Managing people rostering and providing coaching and feedback to our restaurant team for service improvements.
- Administer and coordinate stock levels for drinks, tableware, and other front-of-house supplies.
- Ensure compliance with licensing laws, health & safety, and food safety standards.
- Conducting internal audits on behalf of the owner to ensure standards and KPI's remain in place.
The Person
- An experienced fine dining Restaurant Manager with demonstrable experience in delivering excellence in a successful restaurant is a must for this role.
- We are seeking a minimum of 5 years' experience in a similar role.
- Deep knowledge of fine dining standards, menu items, and wine pairings.
- For this role, we are seeking a person who has had extensive experience in a variety of roles in a restaurant, from serving to supervising to bartending.
- Communication is key. We seek a well-spoken, strong communicator with the ability to adapt style and approach when required.
- Strong demonstrable financial management skills (budgeting, cost control, forecasting, etc).
- An experienced hospitality people manager with hands-on experience of training, coaching, and engaging a team. A real culture carrier, who can lead, but can also roll up their sleeves and get stuck in.
- Familiarity with restaurant industry trends and the ability to adapt to change, such as new food trends, service styles, or dining experiences.
- An interest in networking and marketing to promote Omos.
- Attention to detail is a must. This role is perfect for a person who strives for excellence and presentation.
- Thorough understanding of health and safety regulations, including food safety standards and alcohol laws (e.g., responsible alcohol service).
- Technology and POS system expertise, and an interest in automating processes.
